Chipotle peppers are made from our farm certified organic jalapenos and left on the plant to ripen and turn red. We then pick them and set them in our cold smoker and gently smoke them for 24 hours using oak and applewood. The peppers are left with a deep smokey flavor and then dehydrated. Chipotle peppers add a rich flavor, a little bitterness, lots of smokiness, and some classic low to medium heat to your hotsauce or sauces. Toasting them in a pan before adding them to other ingredients in the blender enhances the flavor. Soaking them in hot water softens them up. Our jalapeno variety which is suited for the colder northeast and our particular soil type grows extra spicy jalapenos so the heat level is hotter than traditional jalapenos. Due to the addition of the smoking process which classifies them as multi ingredient, these are not certified organic.
