Spicy Garlic Scape Pickles

Garlic scapes are the garlic shoots that grow on hardneck garlic in June. If left on the garlic plant, these shoots eventually form beautiful flowers. We pick these lovely shoots when they are tender and are quite a delicacy here in the Northeast. Our farm pickles these immediately after harvest using apple cider vinegar, water, cane sugar, salt, peppercorns, onions, and a ring of fire cayenne pepper and makes a tasty and very unique pickle. These pickles make a wonderful addition to charcuterie, snack plates, garnish on cocktails like a bloody Mary, or cut up and add to potato or chicken salads. We use them as is as pickle when eating sandwiches and are our go-to for quick appetizers served with cheese and nuts. Use the brine for marinades or salad dressings when the pickles are gone. These have a medium to hot level of heat.

We discovered these at our local Garlic Festival in Saugerties NY. We now ordered them and share them with our foodie friends. Just the right amount of spice and great in a Martini!

These pickled scapes are so amazingly good that my kids (grown ones, believe it or not) are fighting over them when I have them over for dinner. They are the bomb!
